I have spent the time from August of 2017 until now, (February 27, 2019) learning how to eat again.
I lost 16 lbs by eating nothing but grilled chicken and veggies, salads and pre made meals. I joined a gym, I got healthy... then, I discovered a couple who loved food as much as we did... AND, we are all in Ministry, so it made for a friendship straight outta Heaven.. or Hades, depending on whether we were in Ministry or cooking.... I gained almost 40 lbs of my weight back!
I decided that as long as it was Gary and myself, I could eat grilled chicken and salads, etc. But when we were out being sociable, not everyone wanted that for every meal, and quite frankly, neither do I!
So, I am about to embark on a journey and I want to invite you to come along!
I'm going to learn to make my favorite meals, just make them with fewer calories, fat, carbs... you know... HEALTHIER!
I'm not trying to be Paula Deen and these meals may not be low enough in calories to help you lose as much as I have, but it will help me not to gain it back, serve the foods I love to cook and help me feel as if I'm not cheating, as I lose this weight all over again.
Am I disappointed in myself? Yes... but I caught it and I've already lost all but 18 lbs of the 40 again, so I can afford to eat a few meals I love, but I've proven yet again that the fatty, fried foods canNOT take over.
Let's be honest, first of all. I stopped going to the gym... MISTAKE NUMERO UNO!
I started convincing myself that a burger and fries (HUGE burgers and HUGE orders of hand cut fries) wouldnt hurt me. I'd cut back and eat only salads for a couple of days and even it out. Would've worked, too.. but I didn't.. I ate the burger on Friday, the fajitas on Saturday and the Fried Chicken on Sunday. No exercise, and I was SO good at telling myself "tomorrow, I'll work out"... but, I didn't!
Wasn't long before I was over 200lbs again.
So, here I am, almost to where I was a year ago and I'm admitting that I screwed it up BIG TIME... but, I'm back on track and that is what matters, right?
So, go with me.. keep me honest... help me eat good food. NOBODY wants to eat boiled eggs, salads and a plain grilled chicken breast every day for the rest of their lives... so, lets eat good food, in moderate portions and change up some things... ground turkey or chicken in place of ground beef. I tried it by just altering the meat in my chili recipe? CUT 200 calories per serving!!!!
I truly CanNOT tell a difference.. it's ALL in how you prepare the meat and how you camouflage it. I actually crave this chili and it will be a recipe I post on my new blog...
On My Way to being a Skinny Cook. It will be this blog.. I'm just changing the name... come with me!
